Cooking modes

On the stove

In a hot skillet over medium heat, add a little oil and sear the steak for 2 minutes on each side. Continue cooking for 3 minutes on each side (depending on thickness), until the outside is grilled and the inside is pink 71°C (160°F) internal temperature.

Wrap in aluminum foil and let rest for 3 minutes. Cooking time varies depending on equipment.

In the oven

Preheat the oven to 205°C (400°F). In an ovenproof skillet, heat a little butter or oil over medium heat. Sear the meat for 2 minutes on each side. Bake uncovered for 4 to 6 minutes, depending on the thickness, until the meat reaches 71°C (160°F).

Remove, cover with foil, and let rest for 3 minutes. Cooking times vary depending on your equipment.

On the BBQ

Preheat the BBQ to medium heat (325°F (163°C)). Sear the steak for 2 minutes on each side. Continue cooking, turning the steak over every 2 minutes for a total of 8 minutes, until an internal temperature of 71°C (160°F).

Remove, wrap in aluminum foil, and let rest for 3 minutes. Adjust cooking time according to your equipment.
